This recipe(same as above) is for my friend Katy, who loves fish cooked in a natural way... Infact, this recipe is also very easy and, if she prepared it in advance, could take it to work for her picnic-lunch...
The ingredients: a whole defrozen hake, 1 lemon, wine vinegar, 1 cucumbers, 1 tomatoe, cappers, green olives, fresh basil, olive oil, salt and white pepper.
Pressure cooker for steaming...(this is advisable!)
Firstly,prepare your cooker: pouring in a little water with a spoon of vinegar and the lemon rind (removed from your lemon). Then, place the basket for steam cooking.
Brush the fish with the lemon and insert it inside the fish. Cook for 10 minutes, then leave the fish in the cooker for a while...
Chop all the vegetables (the quantities are according to your taste) and mix them together... Season with a few tsp of olive oil, salt and basil...
Remove the fish from the cooker... It looks very firm...
Take the bones and some of the skin off and chop it, by your fingertips...
Finally, add the vegetable mix and season with more olive oil, drops of vinegar, some more salt and white pepper...
Refrigerate for sometime.
I usually serve it on a puff pastry basket... This time I had a little (crab shaped) pastry left in the freezer from another recipe... I baked it for 15 minutes in a hot oven (220°C) until golden brown...
